Italian Chicken & Vegetables

Italian Chicken & Vegetables
Yields: 4 Servings
Ingredients:
4 aluminum foil sheets, large enough to wrap around one chicken breast.
4 boneless skinless chicken breast halves (4 ounces each)
4 teaspoons olive oil
salt and fresh ground pepper, to taste
2 garlic cloves, chopped
1 yellow onion, thinly sliced
1 red bell pepper, julienned
​4 small carrots, julienned
​4 large basil leaves
⅓ cup Kraft Zesty Italian Dressing

Instructions:
Preheat oven to 375
Place one chicken breast on each sheet of foil.
Drizzle a teaspoon of olive oil over each chicken breast.
Season chicken with salt and fresh ground pepper.
Arrange chopped garlic, slices of onion, peppers, and carrots on top and around each chicken breast.
Place a basil leaf on top of each chicken and vegetables.
Spoon 1 to 2 tablespoons of salad dressing over chicken and vegetables.
Fold the sides of the foil over the chicken, covering completely; seal the packets closed.
Transfer foil packets to a baking sheet.
Bake for 25 to 30 minutes, or until chicken is cooked through.

Bacon Cheeseburger Roll-Up

 Bacon Cheeseburger Roll-Up
Ingredients:
1 lb. ground beef
4 slices of bacon, chopped
1 small onion, chopped
8 oz Velveeta cheese, cut into 1/2-inch cubes
1 pkg. (13.8 oz.) refrigerated pizza crust

Instructions: 
Preheat oven to 400°F.
Brown ground beef with bacon and onions in large skillet on medium-high heat; drain. Return meat mixture to skillet. Add Velveeta; cook until melted, stirring frequently. 
Unroll dough onto baking sheet sprayed with cooking spray. Press into 15x8-inch rectangle; top with meat mixture. Roll up, starting at one of the long sides. Make sure the roll up is seam-side down.
Bake 20 to 25 min. or until golden brown.

Nutella Stuffed French Toast

Nutella Stuffed French Toast
Serves: 2
Ingredients:
2 large eggs
1/4 cup milk
4 slices French bread
4-6 tablespoons Nutella
2 tablespoons butter
Powdered sugar, for serving

Instructions:
In a shallow bowl or pie plate, whisk the eggs and milk together. Spread 2 slices of the bread with the Nutella, about 2-3 tablespoons per slice. Place the other slices of bread on top and gently press them together. Carefully dip both sides of each sandwich into the egg mixture until well coated.
In a large skillet, melt the butter. Add the French toast sandwiches and cook until golden, about 4 minutes per side. Cut the sandwiches in half on the diagonal and transfer to plates. Dust with powdered sugar and serve immediately.

Disney's Baked Ravioli

Disney's Baked Ravioli
Serves 6-8

Ingredients:
2 Tbsp extra virgin olive oil
1 lb ground beef
2 cloves garlic, minced
1 small yellow onion, minced
2 large tomatoes, diced small (I used a 14.5 oz can petite diced tomatoes, drained)
15-oz can tomato sauce
4 Tbsp tomato paste
2 Tbsp dried basil
2 Tbsp dried oregano
2 Tbsp dried garlic
Coarse salt, to taste
Freshly ground pepper, to taste
2 cups red wine or beef stock
1 lb store-bought frozen ravioli, defrosted in refrigerator (I used cheese)
2 cups shredded mozzarella cheese
3/4 cup grated Parmesan cheese

Instructions: 
Heat olive oil in large skillet or pot over medium-high heat. Add sausage and ground beef, breaking up with a wooden spoon, until meat starts to brown. Add garlic and onion, stirring occasionally, until meat is cooked through. Stir in tomatoes, tomato sauce and tomato paste. Bring to a simmer.
Stir in basil, oregano, garlic powder, salt, pepper and red wine or beef stock. Cover and simmer for 1 hour.
Preheat oven to 375 degrees. In bottom on 9x13-inch pan, pour 2 cups of sauce. Cover with layer of ravioli. Pour remaining sauce on top. Sprinkle with cheeses.

Bake 30 minutes, or until cheese is melted and golden.

Ham and Cheese Biscuit Sliders

Ham and Cheese Biscuit Sliders
Yield: 8 biscuits
Ingredients:
1 (16 oz) can of biscuits (I used Grands)
1/2 pound of deli sliced ham ( I used Boar's Head)
1/2 pound thinly sliced Swiss cheese
Honey to drizzle

Instructions:
Preheat oven to 350 degrees.
Bake your biscuits per packaged directions.
Remove biscuits from oven and allow to cool a minute or two.  Keep your oven on and your baking sheet out.
 Slice each biscuit in half and lay the two pieces out.  Top one half of each biscuit with a few pieces of ham and a few pieces of cheese.  Add the top back on the biscuit and place all 8 of your sandwiches back on a foil lined baking sheet.
Drizzle a tablespoon or so of honey down over each sandwich.  Place your baking sheet full of sandwiches back in the hot oven and bake another 5 minutes.  Remove from oven and serve immediately.
