Disney's Baked Ravioli
Serves 6-8
Ingredients:
2 Tbsp extra virgin olive oil
1 lb ground beef
2 cloves garlic, minced
1 small yellow onion, minced
2 large tomatoes, diced small (I used a 14.5 oz can petite
diced tomatoes, drained)
15-oz can tomato sauce
4 Tbsp tomato paste
2 Tbsp dried basil
2 Tbsp dried oregano
2 Tbsp dried garlic
Coarse salt, to taste
Freshly ground pepper, to taste
2 cups red wine or beef stock
1 lb store-bought frozen ravioli, defrosted in refrigerator
(I used cheese)
2 cups shredded mozzarella cheese
3/4 cup grated Parmesan cheese
Heat olive oil in large skillet or pot over medium-high
heat. Add sausage and ground beef, breaking up with a wooden spoon, until meat
starts to brown. Add garlic and onion, stirring occasionally, until meat is
cooked through. Stir in tomatoes, tomato sauce and tomato paste. Bring to a
simmer.
Stir in basil, oregano, garlic powder, salt, pepper and red
wine or beef stock. Cover and simmer for 1 hour.
Preheat oven to 375 degrees. In bottom on 9x13-inch pan,
pour 2 cups of sauce. Cover with layer of ravioli. Pour remaining sauce on top.
Sprinkle with cheeses.
Bake 30 minutes, or until cheese is melted and golden.
